Egg fried rice (traditional upgraded version)

In fact, the most traditional egg fried rice is eggs and rice mixed and stir-fried, but compared to us living in today's society, it is a bit monotonous, so we added some ham sausage to the traditional basis, so that the fried rice will not look so monotonous, and it will be richer and more appetizing!

Have all ingredients ready. Cold rice, half a ham sausage, spring onions and an egg; usually one egg is enough for a single person, it looks very simple.

First, chop the shallots into small pieces and set aside.

Cut chicken and ham sausage into pieces. (The reason why we emphasize the use of chicken and ham sausage is because the flavor of chicken and ham sausage goes better with egg fried rice)

Crack the eggs into a bowl, add a little salt, and stir quickly with chopsticks. Set aside.

Heat up the wok. When the pan is slightly smoking, add the vegetable oil. After the oil is hot, pick up the wok and shake it twice to make the bottom edge of the pan evenly covered with a layer of oil to prevent sticking.

Pour in the eggs and use chopsticks to quickly stir them into crumbs (chopsticks are more effective than a spatula here).

Then add the diced ham and stir-fry evenly.

Stir-fry properly and take it out for later use (the purpose of taking it out is to avoid further frying the eggs when frying the rice, and it is more convenient to fry the rice separately).

No need to wash the pot, continue to add a small amount of vegetable oil, heat until smoking and then slide the pot (rock the end of the pot twice in one direction to prevent the rice from sticking to the pot).

After the pan is cooked, lower the heat to medium-low, add the rice and stir-fry (this step is very important, the rice should be fried for a little longer, the purpose is to stir-fry the rice until it is slightly dry and fragrant).

After the rice is fried, add the previously fried eggs and ham, add a little salt and stir-fry quickly evenly.

Immediately add chopped green onion and a little chicken essence (you can add it or not), stir-fry quickly over medium heat and evenly distribute.
