Prepare ingredients.

Wash the fish and cut into 3 cuts on each side.

Heat the wok. After the oil is hot, add the crucian carp and fry it briefly.

Add cooking wine, cold water, green onions, ginger, and coriander roots and simmer over high heat for 5 minutes, then reduce to low heat and cook for another 5 minutes.
