Braised Pond Fish
Overview
Every time I go to a fish stall and see fresher chilled fish, I can’t help but buy some. I saw that the fish in the pond was relatively fresh that day, and I hadn’t eaten it for a long time, so I picked a few more. The most important thing was that it had more meat and the price was cheaper.

Clean the pond fish and drain it.

Put it in a container, add salt and rice wine, mix well, and marinate for about an hour.

Heat oil in a pan, put the fish into the pan, and fry slowly over low heat.

While frying the fish, prepare the ingredients (scallion segments; shredded ginger; minced garlic, add soy sauce, oyster sauce and water in a bowl and mix well).

Brown the pond fish on both sides.

Add shredded ginger and minced garlic and fry until fragrant.

Then add the prepared soy sauce water and simmer over medium heat.

When simmering until a small amount of water remains, add cornstarch and gravy (mix cornstarch and water evenly).

Continue to boil and sprinkle with scallions.
