Overview

Douping tofu is a strange flower of Chinese food culture. What is unique about it is that it uses unique natural well water (commonly known as acid water) in Shiping, Yunnan as a coagulant. It is rich in nutrients and does not contain any harmful substances. What's amazing is that you can't make tofu without this sour water from Shiping. Someone once used this sour water and asked Shiping's masters to go out to make tofu, but they tried countless times without success. Some people joked that Shiping tofu is a Shiping patent that cannot be taken away. Shiping tofu is also a good gift for distant relatives to entertain guests.

  1. Place Shiping tofu on the cutting board and cut into cubes of about 2 cm.

  2. Heat the wok, pour in cooking oil and heat until it is 70% hot, add the tofu cubes and fry until they are bubbly and slightly yellow, then take them out.

  3. Wash and cut coriander into sections.

  4. Put the fried tofu into a small basin and add the chopped coriander segments.

  5. Add salt, powdered MSG and paste chili powder.

  6. Add appropriate amount of green pepper powder.

  7. Add about a spoonful of light soy sauce, then lift the small basin with both hands and stir the tofu and seasonings evenly.
