Open the backs of the prawns and remove the mud lines, wash and drain

After stir-frying the red oil, add onion, ginger and garlic and stir-fry for 1 minute, add salt and 2 tablespoons of cooking wine

Add sugar, sugar and salt in a ratio of 2:1, add half a bowl of water and simmer for 3 minutes, then reduce the juice over high heat.
