Add salt, 1 spoon of light soy sauce, cooking wine, pepper, and pepper water to the minced meat and stir in one direction until thickened.

Chop onions, ginger and garlic.

Cut the tofu into mahjong-sized pieces (cut slightly thinner, about 3 or 4 mm thick)

Take a piece of tofu and spread an appropriate amount of minced meat on it.

Cover with another piece of tofu to form a tofu box.

Beat the eggs and put them into the tofu box and dip them in the egg liquid.

Fry in oil pan until both sides are golden brown and set aside.

Leave oil in the pot, add onion, ginger and garlic and saute until fragrant.

Add 1 spoonful of cooking wine and light soy sauce, pour half a cup of water, add oyster sauce, sugar and a little salt and bring to a boil. Add the fried tofu box and simmer over medium-low heat until the soup becomes less.

Pour in a little water starch to form a thin gravy, and sprinkle with chives.

Remove from pan and plate.
