King Oyster Mushroom and Spicy Noodles
Overview
When summer comes, I like to eat something refreshing but not bland. Therefore, noodles are the first choice. I'm on a diet recently, so I'm completely vegetarian, and I also choose multigrain noodles. Eating more whole grains is good for your health. Hehe. I don’t really like to eat scallions, but my grandfather does, so I added my favorite king oyster mushroom to season it. Then, everyone is happy.

Wash and shred carrots and king oyster mushrooms. It doesn't need to be too fine, otherwise it won't taste good when cooked. Wash and cut the cassava into sections, about 2 inches long.

Chop dry chili pepper, ginger and garlic into mince. The dried chili peppers I buy are not too clean. I usually wash the loose soil on the outside of the chili peppers and then dry them.

Blanch shredded carrots, shredded king oyster mushrooms and scallops separately, take them out and let them cool. The multigrain noodles are also cooked. Rinse them with cold water, then drain the cold water and set the noodles aside for later use.

Put oil in the pot, heat it up, add onions, ginger and garlic, and fry over low heat for a minute or two. Remember to use low heat and don’t burn it.

When the garlic looks yellow, add soy sauce and vinegar. Use a shovel to pull it out. After it is evenly divided, add an appropriate amount of boiled water and boil it into a juice. No need to add starch or the like, just turn off the heat.

Mix the noodles with the blanched vegetables and pour the sauce prepared in the previous step over the noodles. Once mixed, you can start eating. Isn't it very simple? Hehe
