Overview

I have always wanted to make wontons for my children, but I have made them many times and they never taste good. The children don’t like it either, and I’m not satisfied either. After checking many recipes from fellow foodies, summarizing their experiences, and combining it with my own preferences, I finally made wontons that satisfied me. Although wontons are small, the ingredients used are very particular. To make a good bowl of wontons, the ingredients and soup account for a large proportion. In short, carefulness is the key.

  1. 100g pork filling, 25g chives, 50g water chestnuts, 1 soaked dried shiitake mushroom, 7 dried shrimps.

Add minced ginger, 1/2 tsp of dark soy sauce, 1 tsp of pepper water, 1g of five-spice powder, 7 pieces of soaked sea rice into foam, 1 minced soaked dried shiitake mushroom, 2g of salt, stir vigorously in one direction, if the meat filling feels dry, add some sea rice water, mix well and then add a quail egg and stir. If the taste is strong, you can also add a little pepper oil. Personally, I prefer it to be light and not added.

  3. Wonton wrappers can be made at home or purchased. I knead the dough myself. It needs to be a little harder when kneading. Use the thinnest setting of the dough press to press it. Cut trapezoidal dough pieces. You can also cut it into square, round or any shape you like. Wrap into wontons shaped like official hats, ingots, etc.

  4. I’m used to rolling them flat, but you can also roll them up in a pile.

  5. Roll until the meat filling is no longer visible, secure the bottom of the trapezoid with both sides, and fold the two corners in half

  6. A beautiful swallow-shaped wonton is wrapped. Uncover the pot and cook until the sides of the bird are transparent. The degree of maturity is based on personal preference.

  7. Add pepper, dried shrimps, seaweed, half a bowl of chicken broth, soy sauce, and salt to the bowl. (If you have a strong taste, you can also add red oil, cooked sesame seeds, and balsamic vinegar to make a hot and sour soup).

  8. After cooking, put it into a bowl, add coriander, chopped chives, shredded egg skin, and two drops of sesame oil.
