Overview
Speaking of pimple soup, everyone in the north should have eaten it. There are different practices in different places. Born in Beijing, I have loved eating this delicacy since I was a child. It is simple and nutritious. The weather is getting colder, what a pleasure it is to eat a steaming bowl of pimple soup!

Peel the tomatoes, (I basically put them on a long fork and roast them in circles on the fire, the skins of the tomatoes will fall apart quickly) Peel the potatoes and wash them.

Cut the tomatoes into cubes and cut the potatoes into long strips. Don’t make them too thick, which will make them hard to ripen, and don’t make them too thin, which will cause them to rot easily.

Beat the eggs, put oil in the pot, pour in the egg liquid when the oil is hot, stir quickly with chopsticks, until it turns light golden color.

Add potatoes and fry for a few times.

Pour in the tomatoes, stir-fry evenly, add an appropriate amount of salt, and a little extra freshness to enhance the flavor.

Pour in appropriate amount of boiling water. Cover the pot, turn to medium heat, and cook for a while.

For flour, use a very thin stream of water and slowly pour it into the flour, stirring constantly with chopsticks until it becomes fine dough.

When the potatoes are almost cooked, pour in the gnocchi little by little, pushing the soup around with a spoon to prevent it from sticking together.

When the gnocchi are cooked and the soup is a little thick, you can turn off the heat.

I like to chop some coriander and chives, put them in an empty bowl, pour a little sesame oil, a little light soy sauce, mix them evenly, and eat them in the pimple soup. You don’t have to leave it if you don’t like it.
