Jingzhou style braised vegetables

Overview

I grew up in Jingzhou, Hubei Province. When I was young, I could only eat the various braised dishes made by my grandmother during the Chinese New Year. Now that I have been working in Shenzhen for a long time, the reason why I make this braised dish is that I miss the taste, and secondly, I feel safe making it myself.   1. Wrap the dried cinnamon, star anise, and peppercorns in gauze

  2. Wash the chicken feet, wings, and kidneys, remove the fingertips from the chicken feet and set aside

  3. First, boil a small pot of water. Boil the raw eggs and cook them. Take them out and put them in cold water. Peel them and put them on a plate. Rinse the pork belly with water

  4. Wash the chicken and chop it into several large pieces. If the pot is large, you don’t need to chop it

  5. Cut the tofu into small pieces

  6. Soak the kelp for three hours in advance, wash and cut into slices

  7. After the preparations are done, you can start making braised vegetables. It is best to use a large clay pot. I have limited conditions here, so I just use a pan. Add water and delicious fresh soy sauce to the pot. The color should not be dark or light. About one bowl of delicious fresh soy sauce, four to five bowls of water

  8. Bring the pot to a boil, add the seasoning bag wrapped in gauze, turn to low heat and simmer for five minutes, then continue to use low heat. Braise the pork belly first to allow the oil in the meat to fully mix with the marinade. Braise until it can be pierced with chopsticks and taken out

  11. The eggs can be scored twice for better flavor, and the tofu is easy to marinate

  12. Finally, marinate the kelp until it can be pricked with chopsticks

  13. There is a lot of marinade, so you can put it in a larger container and pour a little marinade on it and store it in the refrigerator. Eat it in several batches. I like to mix it up, cut a little of each, heat the pot with a little oil, pour in the braised vegetables, add some chili sauce and light soy sauce and simmer
