The water is boiling at 90°C.

Make Longjing tea.

Add salt to the shrimp.

Add chicken essence and mix well.

Add a small spoonful of egg white and mix well.

Add starch and mix well and set aside.

Drain the shrimps into the water, boil the water and add the shrimps.

Put the shrimp in and don't move.

After the water boils again, gently push the shrimps with a spoon and remove them when they are cooked.

Place the cooked shrimps into a colander.

Heat oil in a pan until it is 70% hot.

Pour the hot oil onto the shrimps that have been soaked in water, and set aside the oiled shrimps.

Put a small amount of base oil in the pot, add the shrimps that have been washed into the oil, and add a little Longjing tea water.

Add salt and chicken essence, add water starch and turn on the heat.

Collect the juice.
