Wash the chicken legs and soak the mushrooms.

Peel the skin and bones off the chicken legs, cut into pieces, then add starch, salt, and cooking wine and marinate for 10 minutes.

Prepare onion, ginger, garlic and pepper oil.

Put oil in the pot and fry the chicken pieces over high heat until they change color and take them out.

Leave oil in the pot and sauté the mushrooms until fragrant.

Add the fried chicken legs, add the water for soaking the mushrooms, light soy sauce, cooking wine, and sugar, bring to a boil, and simmer for 5 minutes until the juice is reduced.
