Overview

The weather is getting warmer, and my appetite is inversely proportional to the temperature, so I thought about having something sour and sweet. Do all foodies think like this?   1. Preparation work: 1. Pour half a pot of cold boiled water for the yams; 2. Put half a pot of boiling water in a small milk pot, add a large handful of rock sugar, stir, and let cool for later use.

  2. During this period, prepare the yam. The yam must be made from hairy yam (as shown in the picture). The flesh is relatively firm, white and should not change color.

  3. Peel the yam, cut it into pieces as thick as a piece of chalk, 6cm long, soak in water and set aside (to prevent oxidation).

Put enough water in a large pot to boil, put in the yam and cook for about 5 minutes (test the thickness, the hairy yam is more resistant to cooking), take it out when it is cooked and crispy, rinse with tap water, and finally soak in cold boiled water for a few minutes to remove the sound, drain and set aside.

  5. After processing the yam, the rock sugar water is almost cold. Add an appropriate amount of white vinegar. The ratio is so that the sourness overshadows the sweetness. Put the yam in a sealable container, pour the prepared sweet and sour water to cover the yam, cover it and refrigerate it. It will taste good in more than three hours, preferably overnight.

  6. When eating, put the yam on a plate, cut an appropriate amount of mango meat into diced pieces, dilute the mango sauce with the rock sugar water (a little bit) soaked in the yam, and pour it on the mango. The cool, sour and sweet mango yam has a rich taste and is mouth-watering!

  7. In the same way, the blueberry jam is slightly diluted with the rock sugar water (a little bit) of the pickled yam, and poured on the yam. It will immediately transform into another elegant blueberry yam. It is worthy of being called the ever-changing yam king!

The one in the picture above was sold out in one go. Haha, my mother happened to be cutting lemons, so I took the slices and soaked them in the yam together to borrow some of the aroma of lemon 🍋!
