Steamed scallops with garlic vermicelli
Overview
This dish has become the most popular dish at the night market recently. The scallops I bought at home are thick and big, but it’s troublesome to put them away. I put some more vermicelli and everything is ready.

Brush the scallops clean with a shopping brush, use a knife to turn around the inside of the scallop shell, take out the scallop meat, and put it into light salt water. Leave a piece of each scallop shell for later use

Soak the vermicelli in warm water until soft

Remove the gizzards from the shellfish and wash away the sediment repeatedly with water

Prepare more garlic, grind it into minced garlic, and stir-fry with a little vegetable oil until golden brown

Place soaked vermicelli, shellfish meat, and garlic paste on the shells in sequence

After the water in the steamer boils, add the scallops and steam them over high heat for 5 minutes.

Leave some minced garlic, add light soy sauce and a little oyster sauce cooking wine in a bowl, mix into juice and set aside

Pour the sauce over the steamed scallops and sprinkle with chopped green onion

Finally, pour in hot oil and serve when you hear a sizzling sound
