Spinach Honey Bean Cake Roll
Overview
In the morning, I saw a handful of green spinach in the vegetables I bought. Oh, it’s so good. I just made honey red beans in the refrigerator last night... I like the colors from nature the most... I originally wanted to roll them with cream, but my husband said that as long as there is cream, he won’t eat it. So, let’s have a vegetarian version^

Add 15g sugar to the egg yolks and stir until the sugar melts

Add salad oil and mix well

Add spinach juice and mix well

Sift in the flour and mix well

Mix until there are no lumps in the batter

Add honey red beans and mix well and set aside

Put the egg whites into an oil-free and water-free basin, add a little salt, a few drops of white vinegar, stir, add 40G white sugar in 3 times and beat until wet foam

Take one-third of the meringue and egg yolk paste and mix it evenly with a spatula

Take another third of the meringue and the mixed egg yolk paste and stir it up and down with a spatula

Pour the mixed egg yolk paste back into the remaining meringue bowl, and use a spatula to stir evenly, avoiding circular motions

Mix into a fine paste

Pour into a baking tray lined with greaseproof paper, smooth the surface, and shake to remove internal air bubbles

Place in a preheated 180 degree oven on the middle rack for 20 minutes

After taking it out of the oven, peel off the oil paper at the bottom and let cool

Roll up and refrigerate for at least 30 minutes to set~
