Steamed Braised Noodles with Soybean Sprouts

Appropriate amount of cucumber, wash and set aside.

Cut 4 tomatoes into small pieces.

Appropriate amount of cabbage leaves.

Put an appropriate amount of water in the pot, add a little salt and bring to a boil. Blanch the cabbage until it is raw, remove and set aside.

Appropriate amount of wet noodles.

Place the noodles in a bowl, add a spoonful of cooking oil and mix well.

Steam over cold water for twenty-five minutes.

Green onions and ginger.

Heat an appropriate amount of oil in a pot, stir-fry ginger, green onions, Sichuan peppercorns, and dry red pepper until fragrant.

Add tomatoes.

Fry with the help of a spatula.

Add the soybean sprouts.

Stir fry a few times.

Season with appropriate amounts of salt, light soy sauce, and dark soy sauce. (I didn’t add water, the soup from the stir-fried tomatoes and soybean sprouts was enough to mix with the noodles) (My three-yuan noodles came with 4 large tomatoes)

Add the steamed noodles and mix well.

Steam for another fifteen minutes.
