  1. For fresh chicken feet bought at the market, cut off the nails and then chop them into small pieces.

  2. Peel and cut potatoes into cubes. Set aside.

  3. Star anise, cinnamon and bay leaves are set aside.

  4. Blanch the chicken feet in cold water, add a little cooking wine, bring to a boil, remove and rinse.

  5. Sauté star anise, cinnamon and bay leaves in a casserole with a little oil.

  6. Add chicken feet and stir-fry.

  7. Add light soy sauce, dark soy sauce, and oyster sauce.

  8. Add appropriate amount of water, bring to a boil over high heat, turn to medium heat and simmer for 15 minutes.

  9. After 15 minutes add potato cubes.

  10. Continue to simmer over medium-low heat for about 20 minutes. Test the taste before serving and add salt as appropriate.

  11. Finished product.
