Spicy fried yellow clams
Overview
In the past, I liked to add chili peppers to stir-fry seafood. This time I changed the method and tried a new taste. I did not add hot sauce and salt when stir-frying, which retained the original freshness of the seafood. Although chili pepper and ginger are supporting roles, I also put a lot of them.

Soak the yellow clams in light salt water for more than 1 hour.

Cut the ginger into thin strips and set aside.

Cut green onions into thin strips and set aside.

Cut the peppers into shreds and set aside.

Pour oil into the pot, stir-fry the peppers over low heat, and add the onions and ginger.

Pour in the yellow clams, stir-fry them all over high heat, add a little sugar, pour in the cooking wine, and serve.
