  1. Remove the bones from the hoof. (Ask the merchant for help when buying)

  2. Wash and remove excess hair, place in an iron pan, skin side down and dry-scald.

  3. Mix soy sauce, oyster sauce, sugar, chicken essence, pepper, and cooking wine into a sauce.

  4. Apply evenly to the inside of the hoof.

  5. Roll up tightly inward and tie with rope.

  6. Put it in the brine soup and cook it, then soak it for a few hours to get more flavor. (Using a pressure cooker is faster)

  7. Slice and serve on a plate when eating, and it will taste better with your favorite dipping sauce.
