Soak the fungus and tear into small pieces.

Chop garlic sprouts.

Wash the Shanghai greens and cut them into sections.

Finely chop the chilli and ginger.

Heat a pot, add a little oil, add ginger, chili pepper and garlic sprouts and stir-fry until fragrant, then add Shanghai greens and season with salt and light soy sauce, stir-fry a few times.

Remove from pan and plate.
