Bait silk is a staple food commonly eaten in Yunnan. It is usually made of rice. I accidentally discovered corn bait silk online and bought it online. It really has a unique flavor.

Beat eggs, dice tomatoes, and chop green onions.

Boil and add water. After boiling, add shredded bait and blanch it briefly.

While scalding the bait shreds, heat oil in a wok and fry loose eggs and set aside.

After frying the eggs in the pan, add the tomatoes, add less soy sauce and salt, and stir-fry the tomatoes until they become a paste.

Add chopped green onion.

Add the hot shredded bait and stir-fry briefly, being careful not to stick to the pan.

Add the previously scrambled eggs, add an appropriate amount of black pepper, and stir-fry evenly. If you feel the flavor is not enough, add some salt.

Take it out of the pan and serve it on a plate, it's delicious.
