Overview
If you want to eat grilled fish, but the late-night snack stalls outside are afraid that the oil is not good, you can make it yourself. In fact, it is not difficult.

Slice the cucumber, shred the onion, cut the green onion into sections, and arrange on a plate (I directly use the baking sheet in the oven at home)

Marinate the fish with salt, cooking wine, and cornstarch for 5 minutes, then fry in oil. Note: After the oil is hot, fry the fish over low to medium heat. Use a spoon to pour the hot oil on the back of the fish while frying. Do not move the fish to prevent it from breaking into pieces.

After frying, pour out the oil from the pan and slide the fish out of the pan directly onto the plate.

Heat oil in a pan, add ginger slices, garlic granules, Sichuan peppercorns, dried chili peppers, and hot pot base ingredients and stir-fry until fragrant

After frying the spices, bring water to a boil, add a few drops of sesame oil, and some chicken powder/chicken essence/MSG. (To taste the saltiness, you can taste the juice at this step. A little salty is better, because there are vegetables at the bottom of the baking pan that will release water when roasted)

Pour it over the fish while it's still hot, add cilantro, and it's done.
