Cat Claw Marshmallow
Overview
This is a marshmallow without water. The marshmallows look so cute and can be placed in a coffee cup to match the marshmallows. Both adults and children will love it, right?

Put the cornstarch into the pot and stir-fry over low heat until the cornstarch is hot. (The starch is fried so that the marshmallow paste will not absorb the powdery flavor and become hard after it is put in)

Put the fried cornstarch into the baking pan and spread it slightly flat.

Take a clean egg and press out small nests on the cornstarch. (Be careful not to press too deep. Just make a slight arc.) There should be a certain distance between the small nests of cornstarch.

Pour water + 120g of sugar into a small pot and heat until the sugar melts.

Pour in the gelatine powder and stir evenly.

Beat the egg whites and 30g of sugar until fine bubbles appear.

Beat steps 5 and 6 at high speed with a whisk until you can draw a figure 8 with chopsticks until it disappears slowly.

Put half of the egg whites into a piping bag. Mash the red pitaya into juice.

Pour the red heart dragon juice into the basin, mix well and put it into a piping bag.

Fill a piping bag with white and pink cotton paste and cut a 4mm opening at the tip.

Gently squeeze the egg whites into the dimples, and finally smooth the egg whites on the surface in a circular motion.

There will be some time between the first cat paw and the last cat paw. The weather will basically be dry, so I will squeeze in the cat paw pattern.

The next day, sprinkle the cornstarch around the nest on the cat's paws, and gently brush the starch away with a clean brush.

Finally, use a large or small spoon to dig out the cat's claws and use a brush to remove the excess cornstarch.

You can eat it directly or put it on top of hot cocoa or coffee!
