Wash the chicken and blanch it in a pot of boiling water (add a tablespoon of cooking wine to the water to remove the flavour). Blanch the chicken until there is no blood left. Remove it, wash and drain it and set aside.

Finely chop ginger, garlic, and pepper.

Wash the pumpkin and cut a hole from the top, and take out the melon kernels inside. My handicap is not pretty.

Heat the pot, add an appropriate amount of cooking oil and heat it until it is 80% hot.

Add the chicken and stir-fry until the chicken is slightly brown.

Add chili, Sichuan peppercorns, ginger and minced garlic and stir-fry until fragrant.
