Clean the large yellow croaker and drain off the water.

Set aside ginger slices, shallots, peppers, and green onions.

Make a few cuts on the fish to make it more flavorful when grilled.

Spread a thin layer of starch on both sides.

Heat oil in a pan, add butter and brown on both sides.

Mix cooking wine, light soy sauce, a little dark soy sauce, oyster sauce, sugar, mature vinegar and appropriate amount of water to make a sauce.

Add ginger slices, shallots and chili and stir-fry until fragrant.

Pour in the sauce, add the green onions and cook for 10 minutes, turning the fish over halfway through.

Sprinkle in green onions and serve.
