Beef Stewed with Tomatoes

Prepare the ingredients: Cut the lean and fat beef into small pieces, tomatoes and coriander.

Put the beef in a pot of cold water, add some cooking wine to remove the fishy smell, boil the water and blanch it.

After the water boils, skim off the foam.

Remove the beef and drain.

Cut the green onion into small pieces and cut the ginger into slices.

Heat an appropriate amount of oil in a pan, add onion, ginger and star anise and sauté until fragrant.

Pour in the blanched beef, add condiments: soy sauce, oyster sauce, cooking wine, sugar, and salt and stir-fry.

Add two small bowls of water, bring to a boil and skim off the foam.

Put the beef broth into the electric pressure cooker and start cooking at the standard setting. After cooking, simmer for half an hour. (If you don’t have an electric pressure cooker, you can also use a non-stick pan to cook it, but it will take longer. Personally, I think using an electric pressure cooker can better maintain the rich flavor of the meat)

Heat another pot, add base oil, add chopped green onions and saute until fragrant, then add tomatoes and stir-fry until soft.

Add the cooked beef and two tablespoons of beef broth and simmer until the broth thickens.
