Wash the eggplant and cut into small pieces together with the pork belly. Wash the lettuce leaves and cucumbers, cut the lettuce into slices, and slice the cucumbers for later use.

Put oil in the pot, heat it up, add chopped green onion, minced garlic, star anise, Sichuan peppercorns, and fennel and stir-fry until fragrant. Pour in minced meat, stir-fry twice, continue to stir-fry appropriate amount of sweet noodle sauce, oyster sauce, and sugar.
