The neighbor’s cherry tree was full of cherries and he kindly gave us some. But the yellow cherries were so sour that the family did not dare to eat them, especially the two children. The girl opened a carton of banana milk and took a few sips before she wanted to drink it. It suddenly occurred to me that I need to add acidic liquid to beat egg whites. Since vinegar and lemon juice are both acceptable, this super sour cherry juice should also be acceptable. In fact, I have used green orange juice before. So I decided to bake a chiffon. The method of using a bread machine to bake cakes using a six-inch cake mold and a small steam rack was learned from the strong coffee and light mood. I tried it once and it wasn't very successful (I opened the bread machine lid to check whether it was cooked or not, but it turned out that the edges were burnt and the middle was not cooked yet), but this time I really succeeded.

The egg whites and yolks of three eggs are separated, and the egg yolks cannot be mixed with the egg whites. This spoon works better than an egg yolk separator. (I forgot to take a photo at this step, so I used the previous one to charge it)

Beat the egg yolks, pour in 40ml banana milk (other milks are also acceptable, flavored milk can reduce the eggy smell), 30ml rapeseed oil (other oils with less obvious smell are better), mix well, then add a very small amount of salt (I added a small spoon It still feels like there are too many points, and the cake will taste salty after baking), a spoonful of (medium) white sugar, and 60g of low-gluten flour, stir it up and down until it becomes a grain-free paste (you cannot continue to stir in one direction, which will make the flour gluten, so it is more convenient to stir with a manual egg beater).

Add a little cherry juice and a spoonful of (medium) sugar to the egg whites, beat with a whisk at high speed until the fish eyes are puffy; add the second spoonful of sugar. Beat the eggs at high speed until fine foam. Professionally, it is called wet foaming, which is white and fluffy. When the egg white is lifted up with a whisk, the top will stand up and become a hook shape. In this step, beat the egg whites as much as possible; add the third spoonful of white sugar, and beat the egg whites at medium or low speed until dry peaks form. When the egg whites are lifted up by the egg beater, a sharp point will appear that cannot stand straight. Some people say that if you really can't judge, you can insert a chopstick and it will be fine if the chopsticks don't fall over.

This twelve-wire whisk is particularly powerful at beating egg whites. Let’s get to the point: Use a rubber spatula to add one-third of the meringue to the egg yolk paste, stir evenly up and down, then pour back into the remaining two-thirds of the meringue, and stir evenly up and down with a rubber spatula. Work quickly and try to avoid defoaming. Mix well and pour into the cake mold. Shake the cake mold vigorously twice to release big bubbles.

Take the bread bucket out of the bread machine, place the small steam rack in the middle of the heating tube, and place the cake mold on the steam rack.

Select "Bake" and "Light Burn" in the bread machine menu. I forgot to select it, and the menu defaulted to "Browning". As a result, twenty minutes before the end of the program, I found that the color of the part close to the mold was already very dark. In order to avoid burning, I turned off the machine and took it out. In fact, it was a bit over-cooked. It was very tall in the middle and later collapsed. Even if you choose "light burning color", it is recommended to go to the back and observe through the window as much as possible, and take it out when it is almost done. Do not open the bread machine cover during baking, otherwise it may cause baking failure.

Take out the cake mold and quickly invert it onto a larger steam rack (to avoid shrinking). After cooling, use a toothpick to carefully remove the mold. It's very beautiful. It's the first time I bake a decent cake.
