  1. Have materials ready.

  2. Rinse the yams under the faucet, peel them, cut them into pieces and put them in light salt water.

  4. Cut green onion into sections; cut red pepper into shreds; cut ginger into shreds.

  5. Prepare the sauce and set aside: vinegar, sugar, soy sauce, bone broth, salt, stir to dissolve the sugar and salt.

  6. Heat oil in a pan, add scallions and ginger and sauté until fragrant.
