Spicy lotus root
Overview
Lotus root is a favorite dish of Hunan people. Dongting Lake, a land of fish and rice, is not only rich in various fish and rice, but also grows lotus flowers, and its roots are used to cook this kind of lotus root. Hunan people eat lotus root in many ways, including stewing it in soups and stir-frying, or mixing it with minced meat to make stuffings for steamed buns and dumplings, which can create different textures: fresh, crispy, pink and glutinous. This spicy lotus root is a must-have snack in Hunan night markets. It is said to be spicy, but Hunan people are very spicy but not good at numbing. It tastes salty, spicy and delicious. In the evening, friends go to the night market and find a small stall to sit and chat about home affairs. They always eat this spicy lotus root dish with various marinated vegetables, and then stir-fry a plate of fried rice noodles with eggs and bean sprouts. It is full of all kinds of things.

Peel and wash lotus root

Place in a pressure cooker and steam over water for 15 to 20 minutes
