Braised saury
Overview
When I was a student, there was a small canteen next to the dormitory. The chef there was absolutely superb at cooking fish. You could buy a half portion of braised saury for 2 yuan. I have never eaten such delicious braised saury since. Later, I learned to make it myself, and it looked and tasted similar. But the best taste is always in memory and imagination.

Wash the swordfish and remove the black membrane inside the abdomen. Cut segments. Add cooking wine and salt to marinate for 10 minutes.

Coat the swordfish segments with flour on both sides.

Add a small amount of oil in the pan, and when the oil is hot, fry the saury segments. After frying one side, fry the other side.

The fried saury segments are placed on a plate.

Take a bowl, mix three tablespoons of water, three tablespoons of cooking wine, one tablespoon of soy sauce, one tablespoon of sugar, a small amount of vinegar, a small amount of salt, and make a juice.

Clean the pot again, add a small amount of oil, and sauté the chopped green onions until fragrant.

Add the fried fish segments and pour in the prepared sauce. Gently turn the fish pieces over and remove from the pan after the sauce is evenly coated.
