Wash the dragon head fish, remove the head and belly and cut into sections, shred the carrots and mince the green onions. Heat oil in a pan, add scallions and dried chilies and stir-fry

Then pour in the processed dragon head fish, be careful not to stir-fry randomly to avoid the fish meat falling apart

Add cooking wine, dark soy sauce, salt and a small amount of water, cover and simmer over medium heat

After two or three minutes, sprinkle carrots and green onions, add chicken essence, pour some red oil and take it out of the pan and put it on a plate
