Wash a Spanish mackerel, make a few cuts on the back with a knife (this will make it easier to taste), add a spoonful of salt and a spoonful of cooking wine and marinate for a while

Sauce: 2 tablespoons cooking wine, 2 tablespoons light soy sauce, 1 tablespoon oil, 1/2 tablespoon vinegar, a few drops of dark soy sauce, add half a bowl of water

Heat the oil in the pan until it is 60 to 70% hot, add the Spanish mackerel and fry until the surface is slightly brown

Flip and fry the other side until golden brown and serve
