Put milk, water, high-gluten flour, low-gluten flour, sugar, salt (do not touch the sugar), and dry yeast (do not touch the salt or sugar) into the bread machine in sequence, select the dough mode (1 fermentation), and make bread dough. After starting for about 10 minutes, add the butter that has returned to room temperature and continue making the dough.

Take out the dough after making it. First divide a 32g piece of dough, divide the remaining dough into 8 equal portions, roll into balls, cover with a fermentation cloth and rest for 20 minutes.

Roll out each of the 8 large pieces of dough that has risen, fold it into a round shape, and place it into an 8-inch chiffon cake mold. Continue fermentation for 40 minutes.

Divide 32g of dough into 16 portions, roll into slightly oval shapes to serve as ears, and ferment for the same 40 minutes.

Preheat the oven to 175 degrees C. Arrange the fermented ear patches on the fermented dough. If it is difficult to fix, you can use cold boiled water to slightly moisten the pasted area to help it fit.

Sprinkle the surface with high-gluten flour.

Place the mold into an oven preheated to 175 degrees C and bake for 18 minutes.

Remember to cover the dough with baking paper when it browns on the surface (about 5 minutes) to prevent the surface of the dough from getting too burnt.

Take out the baked bread and let it cool down before removing it from the mold.

Put the white chocolate and dark chocolate into heat-resistant plastic bags respectively, soak them in hot water to melt, then cut a small hole in the corner of the plastic bag and use it as a paintbrush to draw the whites of Totoro's eyes, beard and belly lines and you're done.
