  5. Covered in egg batter! (Add eggs to flour and a small amount of salt to make an egg paste)

  6. When the oil is 70% hot, start frying the eggplant pancakes. Don’t make the fire too high as they may burn!

  7. Use a small bowl to add sweet and sour salt, add a small amount of water and cornstarch and mix well. Put a little oil in the pot and stir-fry the onion, ginger, garlic, chopped pepper and bean paste until fragrant. Add the fish-flavored sauce and bring to a boil!
