Vegetarian assorted braised pancakes
Overview
Pu cake is a kind of pasta in my mother's and grandma's hometown. It can be steamed in water or baked with a griddle. The steamed pancake is chewy and the pancake is crispy when pan-fried. The prepared pancake can be rolled, braised, stir-fried or simmered. Now there is no gourd or firewood, only steaming with water.

-
For 500 grams of flour, the water cannot be added all at once when making the dough. It must be added in batches to make a smooth dough.
-
Mother makes the noodles herself. She first adds water in batches to make the noodles into pieces like this, and then "rolls" each piece, that is, adds water little by little, and slowly brings the loose pieces of dough together. This is called "rolling", and it is done until the surface is smooth, the hand is light, and the basin is light.
-
The dough is light and the pot is light, and it's ready. You don't need to wake up the dough, you can roll out the cakes directly. Next, under the guidance of my mother, I will roll out the cakes.
-
First add water to the steamer and bring to a boil over high heat. Sprinkle flour on the surface, scoop out a small ball of dough and flatten it.
-
Use a rolling pin to roll it out as round and smooth as possible.
-
After rolling out, place the cake onto the rolling pin. Use a rolling pin to lift onto the steamer.
-
Pick the cake onto the steamer and slowly unfold it from one side to the other. You can put the cake in. Note that the cake needs to be steamed for a while after being put in. Usually, the previous cake is cooked before adding the next one. This time is usually enough to roll out one cake, otherwise the cake will stick.
-
After all the cakes are put in, steam over high heat for 15 minutes.
-
When the cake is cooked, this is what it looks like when you open the pan
-
Fold the cakes in half one by one and take them out
-
Take out all the snails and put them together
-
Let’s see if the cakes I made are puffy enough.
-
When you are ready to eat braised pancakes, cut the pancakes while they are still hot. Once cooled, they will become more chewy and difficult to cut. If you can’t finish it in one sitting, just use it when making fried pancakes next time.
