Prepare main materials;

Put all ingredients except shredded coconut and dried cranberries and 5 grams of olive oil into the bread machine barrel;

A dough mixing process ends and the dough begins to have gluten;

After starting a dough mixing program again for 15 minutes, the dough can pull out the film;

Take the dough out to the chopping board, make the dough into a round shape, and continue to put it back into the bread machine barrel;

Cover the bread machine barrel with a damp cloth, close the lid and start fermentation. The machine is not powered on at this time. If the room temperature is low, it is recommended to use the bread machine’s fermentation function;

Ferment at room temperature 23 degrees for one hour until doubled in size;

Take out the dough, press to deflate, and divide into 5 parts;

Roll the dough into a round shape, cover with plastic wrap and let rise for 15 minutes;

Take a small piece of dough, flatten it and roll it out; brush a layer of olive oil on the dough;

Complete all 5 pieces of dough in turn, stack them together, and finally use a rolling pin to roll the top layer slightly;

Cut into 5 equal portions;

Place the dough cut side up and place it in the bread machine bucket; continue to cover the bucket with a damp cloth and put it into the bread machine for the second rise;

After about an hour and a half, the dough has fermented in place. Brush the surface of the dough with egg wash and sprinkle with the remaining shredded coconut and dried cranberries. Start the baking program for 45 minutes and it is still browning. At this time, the bread machine barrel has been wrapped with tin foil;

When the time is up, lift out the bread machine bucket;

Invert the bread and let it cool on a wire rack;

Tear open the bread and take a look. The texture is fine and the bread is soft; very soft and light.
