Sweet and sour tofu
Overview
Guxi is a unique cooking method in Cantonese cuisine. The main ingredients are deep-fried and tomato sauce is used to create a sweet and sour taste. It is usually paired with the fruit pineapple. The sauce is rich in caramel and sweet and sour. During the perfect season when pineapples are in season, it would be unreasonable not to make a few sourdough dishes. I have cooked sweet and sour pork and sweet and sour pork ribs, and today I am going to make sweet and sour tofu - although it is a vegetarian dish, it tastes particularly delicious because of the sour taste, and it can compete with meat dishes!

Cut the pineapple into slightly thick slices, soak in light salt water for a while, remove and drain and set aside;

Cut the old tofu into mahjong-sized pieces and evenly coat with a layer of dry starch (excluding the amount);

Pour oil into a hot pan, add tofu cubes, and fry over medium heat until the tofu is golden brown and crispy on all sides;

Take the fried tofu out and absorb the excess fat;

Tomato paste, salt, sugar, starch and water, stir well to form a sauce and set aside;

Slice green pepper, mince ginger and garlic, set aside;

Heat another pot, add a little cooking oil, or leave the oil in the original pot, and sauté the minced ginger and garlic over low heat;

Add the sauce, continue to cook over low heat, stirring until thick;

Add green pepper and pineapple and stir-fry evenly;

Add the fried tofu and stir-fry until the sauce is evenly coated on the ingredients.
