Wash the broccoli, break it into small florets, blanch it in a pot of boiling water for about 1 minute, remove and drain. Slice yam, carrots, and large red peppers, shred onions, ginger, and mince garlic.

Heat the cold oil in the pan, add the green onion and ginger and saute until fragrant.

Add the carrot slices and stir-fry for a while, add the yam slices and continue to stir-fry for a while.

Add blanched broccoli and red pepper and stir-fry evenly.

Add salt and minced garlic and saute until fragrant.

Pour in a little water starch to thicken the gravy.
