Beer Duck
Overview
I haven’t made this dish for a long time, so I made it again on a whim, and it was a great success. I personally think this is a dish that has both good looks and taste, and is worth a try

Wash the duck meat and set aside

First, marinate the duck meat with ginger, cooking wine, light soy sauce, and onions. Marinate it for about 15 minutes (if you have enough time, you can marinate it more. I marinated it for 30 minutes, which is more delicious)

Pour a little clear oil, and then pick out some fatter duck meat for frying. This will not only fry the excess duck meat, make it taste more fragrant, but also produce some oil for frying

Then pour in all the duck meat and stir-fry over medium heat

After stir-frying for a while, add bean paste over low heat and stir-fry

Then add a spoonful of fish sauce (if you don’t like fish sauce, you can omit this)

Then pour in the cooking wine

Add another spoonful of light soy sauce and stir-fry

Pour in a small spoonful of sugar

Pour in shredded ginger

Now add the remaining seasonings

Mix all the seasonings and stir-fry for a few minutes

Pour in a bottle of beer. The glass bottle is just the right size to cover the duck meat

The fire is boiling

Cook over medium heat to reduce the juice. If you like it juicy, you don’t need to cook it too dry

When the juice is almost reduced, pour in the minced garlic

Pour in the red pepper, stir-fry for a few times and then take it out of the pan. The fried red pepper will be crispy and delicious

Before serving, add green onions, stir-fry and serve

Take it out of the pot and put it on a plate. Add some coriander to garnish and enhance the flavor
