Clean the small yellow croaker, marinate it with salt, pepper, onion and ginger slices for ten minutes, and make a paste with appropriate amount of starch, flour and crispy meat powder. It can be thinner or thicker, depending on your taste. I made it thinner. If you like more noodles, you can make it thicker.

Coat marinated fish in batter and prepare for frying.

You don’t need deep frying at home, as it consumes too much oil, so just use a little more oil than usual for frying. Just half-fry and half-fry. The oil should be 50% hot, and the heat should be low the whole time. Don’t be in a hurry to turn it over. After one side is set, shake the pan until the fish can move and then turn it over. Or use a spatula to flip it over after the lower edge is browned. Anyway, don't worry, the skin will peel easily if it's too early.
