The homemade chili sauce is from last year, but everyone has started making it again this year, which makes me itchy! We need to eat them up quickly so we can make new ones! So I came up with this Stir-fried Loofah with Chopped Peppers, which tastes pretty good! Moreover, the color is pretty, and it is both eye-catching and stomach-pleasing. Today's loofah is a very green one that I grew myself as a gift from my neighbor next door. I did not peel it with a spatula, which would have lost a thick layer of skin, which was very wasteful. Instead, I used a knife to gently scrape off the old layer of skin. The fried loofah looks very green in appearance, and it does not taste soft and chewy.
