Overview
Stir-fried pork is an authentic Hunan dish. The main ingredients are pork belly and green and red peppers. The main cooking technique is stir-frying. The delicious stir-fried pork is tender and has the oily aroma of meat, but it is not cloying at all. To make this dish, the ingredients come first and the heat second, highlighting the characteristics of hot and sour, fragrant and tender. The stir-fried pork dish I made today ditched the green and red peppers and used the sauce method instead. It tasted very good.

The raw materials are ready;

Put the pork belly into the pot with cold water, add half of the peppercorns, cooking wine and ginger slices to remove the fishy smell and increase the aroma;

Chop coriander and garlic, shred half of the ginger and slice half of it;

Take a large bowl, add 2 tablespoons of white wine, 4 tablespoons of light soy sauce, 1/2 tablespoon of sugar, 1 teaspoon of balsamic vinegar and a little stock and mix well. If there is no stock, use water;

Put the other half of the shredded ginger and Sichuan peppercorns into the sauce bowl;

Take out the pork belly and let cool and cut into thin slices;

Pour a little oil into the pot. When the oil temperature reaches 50%, add the pork belly and stir-fry;

Pour in the sauce;

Stir-fry for a while until the juice is reduced and then turn off the heat;

Remove to a serving platter and garnish with a little cilantro.
