Wash the fresh beef shank, soak it in water for an hour to remove the blood, and cut into sections.

Prepare the seasoning as shown in the picture

Add oil to the wok, add ginger, onion, garlic, pepper, anise and other seasonings and stir-fry until fragrant, then put it into the pressure cooker. Blanch the beef shank over low heat, take it out and put it in the pressure cooker. Then add two grains of rock sugar, soy sauce, dark soy sauce, bean paste, and some salt. Cook for 40 minutes.
