Cut the green onion, cut the ginger, cut the pig's trotters into sections and wash them (just ask someone to chop them when you buy them), blanch the pig's trotters in hot boiling water, boil the blood, remove and wash them. If there are hairs on the pig's feet that have not been removed, you can use tweezers to pull them out; put oil in the pot, heat it up, add ginger, garlic and Sichuan peppercorns and saute until fragrant;

Then add the pig trotters and stir-fry. After stir-frying for a while, add dark soy sauce, light soy sauce, cooking wine, and rock sugar;

Continue to stir-fry for a few more times, then add hot water that covers the pig's trotters;

Add the star anise, bay leaves and cinnamon seasoning, and add an appropriate amount of salt to taste;

After the fire boils, cover the pot and turn to low heat. For about an hour, poke it with chopsticks until it can be easily penetrated. (The cast iron pot I use is more time-saving. If you think it’s not too bad, just keep stewing. The worse it gets, the better it tastes.)

If you like to eat braised eggs, you can boil the eggs halfway, peel them and put them in to braise together. It’s especially delicious~~~

It will be simmered for an hour, then turn to high heat to drain the soup and it is ready to eat. Sprinkle some green onions out of the pan. Pig's trotters will be converted into gelatin during the cooking process, and it is super delicious to eat after cooling.
