Prepare all the ingredients

Grate the peel of half a lemon and add it to the caster sugar

Mix evenly and let it sit for 1 hour until the fragrance comes out.

Pour the caster sugar and lemon zest mixture into the egg bowl

Mix well with a hand mixer

Add the mixed and sifted low-gluten flour and baking powder, and mix evenly with a hand whisk

Add a little vanilla extract and stir with a spatula until completely mixed and the mixture becomes a thick paste

After heating the butter and melting it, pour it into the mixture

Stir evenly again with a spatula until the mixture becomes a smooth paste, then place it in the refrigerator for 1 hour

Remove batter from refrigerator. By this time the batter has solidified. Leave it at room temperature for a while. When the batter returns to a flowable state, put the batter into a piping bag

Pour into the madeleine mold, about 90% full

Put the mold into the preheated oven, set the upper and lower heat to 185 degrees, and bake for 10 minutes. My mold is super small, so it takes less time. In the picture, when baking for 6 or 7 minutes, a high bulge has appeared on the back of the madeleine
