Steamed three eggs
Overview
The main ingredients of steamed three eggs are eggs, salted duck eggs, and preserved eggs. In this dish, the three ingredients each have their own functions. Eggs are the main body and play a coagulating role, and the surface decoration relies on egg yolks; salted duck eggs mainly enhance the flavor; and preserved eggs are used for both color and seasoning. Combining the three types of eggs with the steamed finished product is a beautiful cold dish.

Set aside 4 egg yolks separately.

Beat the remaining egg whites and 1 egg into egg liquid.

Cut salted duck eggs into cubes. The egg white and egg yolk of the preserved egg are cut into pieces separately. Add the salted duck eggs and preserved egg whites into the egg liquid and mix slightly.

Take a container (lunch box) and wrap it tightly with baking foil. Mainly to facilitate the removal of finished products. Spread the preserved egg yolk on the bottom layer. Pour in the beaten egg mixture.

Put into the electric pressure cooker and steam for 5 minutes.

Add a little salt to the egg yolks and mix well. After steaming for 5 minutes, uncover and gently pour in the egg yolk liquid. After pouring in, be sure to keep the container stable.

Continue steaming for 10---15 minutes.

Remove the tin foil from the pan and place on a plate.

Cut into slices, garnish and serve.
