Homemade Pomfret Stew
Overview
As a mother of two children, I take my children to cook every day after get off work. What I consider is trouble-free, nutritious and delicious. We make this fish stew almost once a week, served with rice, and the kids really like it. Every year I pickle a jar of sugared garlic. When stewing fish, I use a little sugared garlic juice to season it. It tastes very good.

For a big golden pomfret, ask the person who bought it to kill it, rinse it well, and cut both sides of the fish with a knife to make it easier to taste.

The secret sauce for fish stew: sugar-garlic sauce.

Prepare ginger, garlic, peppercorns and salt.

Pour peanut oil into the pot, pour a little more, heat it up and add ginger slices.

Put the fish on the ginger slices and fry it so that the fish skin does not stick to it. Fry both sides.

Cook in pickled garlic sauce.

Add a little dark soy sauce, add ginger, garlic, peppercorns and salt.

Pour in water to cover the fish and bring to a simmer over medium heat.

Simmer until the soup is thick and serve. If there is too much soup when serving, you can also add some water starch to thicken it.
