Clean one piece of grass carp

Cut off the big bones, as shown in the picture, do not cut off the fish tail, it connects two pieces of fish meat.

Cut the fish bones into small pieces and set aside

Cut the fish diagonally, but do not cut into the skin, and then cut it in half at right angles.

Rinse the fish head and body with clean water

Dry the fish body with a dry cloth, sprinkle with a small amount of salt and marinate for 20 minutes.

Heat the pan with cold oil, add fish bones and shredded ginger, stir-fry until cooked and add a little white wine or rice wine. Add a large bowl of water and simmer for 10 minutes to make fish soup. Filter out the fish bones, leaving only the fish soup for later use.
