Shredded Pork with Beijing Sauce
Overview
One of my son's favorite home-cooked dishes. Every time he goes out to eat, he must order two portions to satisfy his stomach. Now I often cook it for him on weekends, because this glorious and arduous task of shredded meat can be left to his father😄

Prepare the ingredients, including scallions and ginger soaked in cold water to make scallion and ginger water, dry tofu cooked in water and cut into square slices.

Put oil in the pot, spread the meat until cooked, take it out and set aside

Put oil in the pot, add sweet noodle sauce and stir-fry for a while

Add onion and ginger water, cooking wine, and sugar, stir-fry until the sugar dissolves

When the sauce becomes sticky, add shredded pork and stir-fry

Plate with shredded scallions

After the sauce is evenly mixed with the shredded pork, pour the dish onto a plate with shredded scallions and add dry tofu to complete the dish. When eating, first mix the green onion shreds covering the bottom of the plate with the shredded pork on top, wrap the shredded pork in Beijing sauce with dried tofu slices, and then roll them up to eat together.
